The Publican
After 15 months of shelter-in-place, the G-Life Chicago edition was officially back—and we kicked it off at The Publican. A meat-centric institution with a beer hall vibe, this spot is definitely not trying to be trendy—it’s leaning all the way into bold flavors and hearty cuts.
The Food
We started with a half order of charcuterie and bread:
The meats were not your typical Italian lineup—think more butcher shop creative than prosciutto and soppressata. Sausages, “mystery meats,” and plenty of sharp, briny pickles to cut through it all.
The bread board was a meal on its own—two large loaves, served with fish dip, pimento cheese spread, and butter. Unexpected, hearty, and totally on-brand for The Publican.
The Vibe
Big communal tables, high ceilings, and pork-forward energy. It’s not quiet or refined—it’s loud, rustic, and confident in what it’s serving. Perfect for a casual night with people who don’t mind getting their hands a little greasy.
The Verdict
The Publican is a place with a strong point of view. If you’re into that Midwestern-meets-European beer hall meat game, it’s worth a visit. Just know what you’re signing up for—this isn’t delicate dining, it’s a flavorful punch to the palate.
